Monday Madness About Cooking

Thanks to some help on the blogger forum, I am able to get back into my blog! Here is our Monday Madness post for this week.

Thanks to all of you who suggested questions. If I haven't been to your site yet to grab them, I will be there soon! This week's questions come from karen. Great questions, Karen! =)

1. What is your favorite main course to prepare?

This is actually a hard one for me to choose. I like making filet mignon with a bleu cheese topping. For everyday cooking I like baked breaded pork chops or even mostaccoli with meat sauce.

2. What is your favorite side dish to prepare?

Roasted asparagus. I just trim the asparagus and throw it in a zip top bag, drizzle some olive oil over it to coat, add some sea salt and pepper and shake it up. I roast it on a sheet pan at 450 degrees F for 15 minutes and it is delicious. It also works great on a foil pan on the grill.

3. Do you like to bake? If so, what is your favorite?

I like to bake when I have enough time. One of our favorite desserts is actually a pretty easy one, Country Apple Dessert. The recipe is at http://www.findmorefacts.com/html/country_apple_dessert.html. It’s really good and goes great with ice cream.

4. What one dish would you like to learn to cook?

I would like to learn to make really good crab cakes with a remoulade sauce. Or maybe a great beef Wellington. Then again, cannelloni would be fun…

5. What is your worst cooking disaster?

One of the worst was this past Christmas Eve. It was the day before Christmas Eve and my oven decided to quit working. I had to completely change my menu at the last minute. I was preparing a standing rib roast with a potato casserole and roasted root vegetables. Needless to stay, those were all supposed to be cooked in the oven! I wound up cooking the prime rib on the grill in 20 degree weather. It turned out okay, but a bit overdone despite close monitoring. I don’t think my meat thermometer was reading correctly in the cold. I cooked the potato casserole in my toaster oven and changed the vegetables to sautéed Brussels sprouts with mustard seeds. They were okay, but not my favorite although everyone else seemed to like them. I switched from fresh baked rolls to bakery rolls and bought the dessert instead of baking it. It was a bit stressful at the last minute but I guess we managed!
